Curried Rice Salad

Ingredients

  • Servings: 4
  • 2 1/4 cups water
  • 1 cup uncooked long grain rice
  • 1 tablespoon margarine
  • 1 teaspoon salt (optional)
  • 1 cup frozen peas, thawed and cooked
  • 1 cup thinly sliced celery
  • 4 green onions, sliced
  • 1/2 cup mayonnaise
  • 1/2 cup chutney
  • 1 teaspoon curry powder

Recipe

  • 1 in saucepan put water, rice, margarine and salt; bring to a boil.
  • 2 reduce heat; cover and simmer 20-25 minutes.
  • 3 cool.
  • 4 add peas, celery and onions.
  • 5 in small bowl combine mayonnaise, chutney, and curry powder.
  • 6 add to rice and stir well.
