Curried Rice Salad

Ingredients

- 2 1/4 cups water
- 1 cup uncooked long grain rice
- 1 tablespoon margarine
- 1 teaspoon salt (optional)
- 1 cup frozen peas, thawed and cooked
- 1 cup thinly sliced celery
- 4 green onions, sliced
- 1/2 cup mayonnaise
- 1/2 cup chutney
- 1 teaspoon curry powder
Recipe
- 1 in saucepan put water, rice, margarine and salt; bring to a boil.
- 2 reduce heat; cover and simmer 20-25 minutes.
- 3 cool.
- 4 add peas, celery and onions.
- 5 in small bowl combine mayonnaise, chutney, and curry powder.
- 6 add to rice and stir well.
