Fettuccine Alfredo (low Fat Version)

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 lb fettuccine pasta, cooked
  • 1/2 cup fat-free cottage cheese
  • 1/2 cup evaporated skim milk
  • 1/2 cup rice flour or 1/2 cup wondra flour
  • salt
  • fresh pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons parsley, minced
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 puree in blender: cottage cheese, skim milk, flour, salt, pepper, and garlic and onion powders until smooth.
  • 2 transfer to saucepan.
  • 3 add parsley.
  • 4 warm on low heat 10 minutes. do not boil.
  • 5 serve over pasta, topped with parmesan.
