Hopping John Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 slice bacon, diced
  • 1/2 cup chopped onion
  • 1/2 cup thinly sliced celery
  • 1 garlic clove, minced
  • 1 (16 ounce) can black-eyed peas
  • 1 1/2 cups chicken broth
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon hot pepper sauce
  • 1/4 cup long grain rice
  • 1 tablespoon chopped parsley

Recipe

  • 1 in large saucepan, cook bacon. remove to paper towels. pour off all but 1 tablespoon of fat.
  • 2 add onion, celery and garlic. cook until soft. add black eyed peas, chicken broth, cayenne and hot pepper sauce. stir in rice.
  • 3 simmer 20 minutes, or until rice is tender. stir in bacon. serve garnished with parsley.
