Hopping John Soup

Ingredients

- 1 slice bacon, diced
- 1/2 cup chopped onion
- 1/2 cup thinly sliced celery
- 1 garlic clove, minced
- 1 (16 ounce) can black-eyed peas
- 1 1/2 cups chicken broth
- 1/4 teaspoon cayenne
- 1/4 teaspoon hot pepper sauce
- 1/4 cup long grain rice
- 1 tablespoon chopped parsley
Recipe
- 1 in large saucepan, cook bacon. remove to paper towels. pour off all but 1 tablespoon of fat.
- 2 add onion, celery and garlic. cook until soft. add black eyed peas, chicken broth, cayenne and hot pepper sauce. stir in rice.
- 3 simmer 20 minutes, or until rice is tender. stir in bacon. serve garnished with parsley.
