Fluffy Pancakes Or Waffles - Gluten Free

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/3 cup tapioca flour
  • 2/3 cup brown rice flour
  • 1/3 cup bean flour
  • 1 teaspoon baking powder
  • 2 tablespoons dry buttermilk (sweet cream)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water
  • 2 egg whites

Recipe

  • 1 beat egg whites to stiff peaks, set aside.
  • 2 spray griddle with cooking spray (pam) and preheat to 365f (a drop of water will skitter across the surface when griddle is hot enough).
  • 3 mix ingredients in order given, folding in egg whites last.
  • 4 pour 2"-3" circles of batter onto preheated griddle.
  • 5 or -- pour 1 cup of batter into a preheated waffle iron that has been sprayed with a nonstick vegetable spray.
  • 6 cook until golden brown.
