Gluten Free Breakfast Surprise

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 squash, peeled & chopped
  • 1 zucchini, peeled & chopped
  • 1 peach, chopped
  • 1/2 cup water
  • 1 cup brown rice flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar, packed

Recipe

  • 1 combine fruit & veggies with water in medium pan.
  • 2 cook on medium heat until softened then cool.
  • 3 in bowl, combine remaining ingredients.
  • 4 mix in cooled fruit & vegetable mixture.
  • 5 pour into 2 greased loaf pans.
  • 6 bake at 350 for 30 minutes.
