Ingredients
- Servings: 6
- 1 squash, peeled & chopped
- 1 zucchini, peeled & chopped
- 1 peach, chopped
- 1/2 cup water
- 1 cup brown rice flour
- 1 teaspoon xanthan gum
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon cinnamon
- 1/4 cup brown sugar, packed
Recipe
- 1 combine fruit & veggies with water in medium pan.
- 2 cook on medium heat until softened then cool.
- 3 in bowl, combine remaining ingredients.
- 4 mix in cooled fruit & vegetable mixture.
- 5 pour into 2 greased loaf pans.
- 6 bake at 350 for 30 minutes.
