Gluten Free Pancakes

Ingredients
- 3/8 cup gluten-free flour (such as bob's red mill)
- 1/8 cup sweet rice flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/8 teaspoon xanthan gum
- 1 teaspoon safflower oil
- 1/4-1/2 cup water (to desired consistency)
- nonstick cooking spray
Recipe
- 1 combine all ingredients in small bowl. mix well. let stand for 5 minutes.
- 2 spray medium heat griddle with cooking spray.
- 3 pour scant 2 tablespoons batter onto griddle.
- 4 turn when edges begin to dry.
- 5 remove from heat when cooked through.
- 6 serve with maple syrup, berries or dust with powdered sugar.
