Gluten Free Pancakes

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 3/8 cup gluten-free flour (such as bob's red mill)
  • 1/8 cup sweet rice flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/8 teaspoon xanthan gum
  • 1 teaspoon safflower oil
  • 1/4-1/2 cup water (to desired consistency)
  • nonstick cooking spray

Recipe

  • 1 combine all ingredients in small bowl. mix well. let stand for 5 minutes.
  • 2 spray medium heat griddle with cooking spray.
  • 3 pour scant 2 tablespoons batter onto griddle.
  • 4 turn when edges begin to dry.
  • 5 remove from heat when cooked through.
  • 6 serve with maple syrup, berries or dust with powdered sugar.
