Gnocchi Beans And Greens

Total Time: 22 mins Preparation Time: 2 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 16 ounces frozen spinach
  • 16 ounces potato gnocchi
  • 1/2 cup butter
  • 1 cup parmesan cheese
  • 12 ounces garbanzo beans
  • 5 garlic cloves
  • salt and pepper

Recipe

  • 1 pan fry spinach in 2 tablespoons butter or margarine until soft.
  • 2 melt remaining butter or margarine over low heat.
  • 3 mince garlic into melted butter or margarine and allow to simmer.
  • 4 add garbanzo beans to butter mixture and stir semi-frequently.
  • 5 boil gnocchi to desired doneness and drain.
  • 6 add gnocchi and garbanzo bean mixture to spinach, stir, and reduce heat to warm.
  • 7 add parmasean cheese, salt, and pepper.
  • 8 stir.
  • 9 cover for 2 minutes.
