High Fiber, High Protein Dish

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 3 cups hot cooked brown rice
  • 1 (19 ounce) can kidney beans, drained
  • 1/2 cup sour cream
  • 1/2 cup asiago cheese
  • salt and black pepper
  • 1 large onion, caramelized

Recipe

  • 1 cook brown rice according to directions with 2 tbs butter on medium heat.
  • 2 caramelize large onion (about 9 minutes).
  • 3 blend everything together while still hot.
  • 4 best served with tossed salad.
  • 5 enjoy.
