High Protein Bran Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 cups bran flakes
  • 1 1/2 cups raisins
  • 1 3/4 cups milk
  • 1 cup whole wheat flour
  • 1 cup soy flour
  • 1 cup toasted wheat germ
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons ground nutmeg
  • 3/4 teaspoon salt
  • 4 eggs
  • 2/3 cup honey
  • 2/3 cup light cooking oil (not olive oil, i like sunflour or safflower oil)
  • 1/4 cup dark molasses

Recipe

  • 1 mix bran flakes, raisins and milk in a bowl.
  • 2 in another bowl, mix the flours, wheat germ, baking powder, nutmeg and salt.
  • 3 in a third bowl, beat the eggs, honey, oil and molasses until very well combined.
  • 4 add the egg mixture to the bran flake mixture and mix well.
  • 5 add the dry ingredients all at once and stir just enough to moisten (do not overmix).
  • 6 put 3" paper muffin cups into muffin pans and fill 2/3 full with batter.
  • 7 bake at 350f for 25 minutes or until done.
