High Protein Bran Muffins

Ingredients
- 2 1/2 cups bran flakes
- 1 1/2 cups raisins
- 1 3/4 cups milk
- 1 cup whole wheat flour
- 1 cup soy flour
- 1 cup toasted wheat germ
- 4 teaspoons baking powder
- 1 1/2 teaspoons ground nutmeg
- 3/4 teaspoon salt
- 4 eggs
- 2/3 cup honey
- 2/3 cup light cooking oil (not olive oil, i like sunflour or safflower oil)
- 1/4 cup dark molasses
Recipe
- 1 mix bran flakes, raisins and milk in a bowl.
- 2 in another bowl, mix the flours, wheat germ, baking powder, nutmeg and salt.
- 3 in a third bowl, beat the eggs, honey, oil and molasses until very well combined.
- 4 add the egg mixture to the bran flake mixture and mix well.
- 5 add the dry ingredients all at once and stir just enough to moisten (do not overmix).
- 6 put 3" paper muffin cups into muffin pans and fill 2/3 full with batter.
- 7 bake at 350f for 25 minutes or until done.
