Karyn's Quinoa Chicken Crock-pot

Ingredients
- Servings: 6
- 3 chicken breasts
- 1/3 cup quinoa
- 4 ounces chickpeas
- 2 tablespoons light peanut butter
- 1/2 cup salsa
- 3 teaspoons orange juice concentrate
- 1/2 garlic clove
- 1/4 onion
- 1 teaspoon cinnamon
- 2 tablespoons soy sauce
- 1 cup water
Recipe
- 1 place all ingredients in crockpot and stir.
- 2 cook on medium for 4 hours or low for 8 hours.
- 3 optional - put 1 red pepper chopped in for the last hour.
