Karyn's Quinoa Chicken Crock-pot

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 6
  • 3 chicken breasts
  • 1/3 cup quinoa
  • 4 ounces chickpeas
  • 2 tablespoons light peanut butter
  • 1/2 cup salsa
  • 3 teaspoons orange juice concentrate
  • 1/2 garlic clove
  • 1/4 onion
  • 1 teaspoon cinnamon
  • 2 tablespoons soy sauce
  • 1 cup water

Recipe

  • 1 place all ingredients in crockpot and stir.
  • 2 cook on medium for 4 hours or low for 8 hours.
  • 3 optional - put 1 red pepper chopped in for the last hour.
