Kasha With Apricots

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 cups chicken broth or 2 cups vegetable broth
  • 1 cup dried kasha
  • 1 egg
  • 2 teaspoons butter
  • 1/4 cup scallion, sliced
  • 1/2 cup dried apricot, slivered

Recipe

  • 1 in a small saucepan, bring the broth to a boil over medium heat.
  • 2 meanwhile, in a small bowl, combine kasha with egg and mix until thoroughly moistened.
  • 3 heat a large nonstick skillet over medium heat. add kasha.
  • 4 cook, stirring, until grains are hot and separated, about 2-4 minutes.
  • 5 carefully stir in boiling broth. cover and simmer over low heat until liquid is absorbed, 12-14 minutes.
  • 6 in a small skillet, melt butter over medium heat, add scallions and cook, stirring often until soft, about 2 minutes.

  • 8 note for vegetarian version: do not use the chicken broth if you are making this for a vegetarian. chicken is not vegetarian. vegetable broth is acceptable.
