Kat's Mom's Family Oatmeal Cookies

Ingredients
- 3 cups flour
- 2 teaspoons salt
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 cups sugar
- 2 cups brown sugar
- 2 cups shortening
- 4 cups oatmeal (uncooked)
- 5 eggs
- 5 teaspoons vanilla extract
Recipe
- 1 sift flour, soda, baking powder, salt & sugar together.
- 2 add brown sugar and softened shortening, blend until crumbly.
- 3 stir in oatmeal.
- 4 you can store this mix in a covered container in the refrigerator for up to two weeks.
- 5 when ready to bake, stir 1 egg and 1 teaspoon of vanilla extract into 2 cups of mix.
- 6 if desired, add any chips, nuts, etc.
- 7 put mix (2 tablespoons per cookie or one level ice cream scoop-full - see picture) on a lightly greased cookie sheet and bake 12-15 minutes in a 350 degree oven until lightly browned.
- 8 let cool on wire rack.
