Gan Shao Xia (shanghai Sweet And Sour Shrimp)

Ingredients

  • Servings: 4-5
  • 1/4 cup ketchup
  • 2 tablespoons shaoxing wine
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sugar
  • 1 tablespoon water
  • 2 tablespoons canola oil
  • 1 tablespoon ginger, minced
  • 3 scallions, cut into 2 inch pieces
  • 1 lb large shrimp, shelled deveined
  • salt & freshly ground black pepper, to taste
  • cooked rice, to serve

Recipe

  • 1 whisk together ketchup, wine, soy sauce, mirin, sugar, and 1 tbsp water in a bowl. set sauce aside.
  • 2 heat oil in a 14 inch flat-bottom wok or skillet over high heat. add ginger and scallions. cook, stirring, until fragrant (1 minute).
  • 3 add shrimp. cook, stirring, until beginning to turn pink (2 minutes). add sauce. cook, stirring, until thick (1 minute).
  • 4 remove from heat and season with salt and pepper. serve with rice.
