Gluten Free Chocolate Chip Oatmeal Cookies

Ingredients
- 8 tablespoons margarine
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 3 cups quick oats
- 10 ounces semi-sweet chocolate chips
Recipe
- 1 cream butter and sugars together.
- 2 add eggs and vanilla.
- 3 blend dry ingredients except oats into butter mixture.
- 4 add oats 1 cup at a time.
- 5 add chocolate chips.
- 6 allow to cool in refrigerator while over preheats to 375.
- 7 using cookie scoop, portion dough into 50 cookies.
- 8 bake for 7-8 minutes, making sure to remove from pan immediately.
- 9 cool on wire racks.
