Gluten Free Chocolate Chip Oatmeal Cookies

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • 8 tablespoons margarine
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3 cups quick oats
  • 10 ounces semi-sweet chocolate chips

Recipe

  • 1 cream butter and sugars together.
  • 2 add eggs and vanilla.
  • 3 blend dry ingredients except oats into butter mixture.
  • 4 add oats 1 cup at a time.
  • 5 add chocolate chips.
  • 6 allow to cool in refrigerator while over preheats to 375.
  • 7 using cookie scoop, portion dough into 50 cookies.
  • 8 bake for 7-8 minutes, making sure to remove from pan immediately.
  • 9 cool on wire racks.
