Gluten Free Chocolate Oatmeal Scotchies

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • 1/2 cup rice flour
  • 1/4 cup potato starch
  • 1/4 cup tapioca flour
  • 1 cup brown sugar
  • 1/2 cup oatmeal
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 6 ounces chocolate chips
  • 6 ounces butterscotch chips
  • 1 teaspoon salt

Recipe

  • 1 cream butter, sugar and egg.
  • 2 add dry ingredients.
  • 3 drop by teaspoonfuls onto a greased cookie sheet.
  • 4 bake at 350 for 8 minutes.
