Gluten Free Oatmeal Raisin Cookies

Ingredients
- 2 cups rice flour
- 1 cup potato starch
- 1/2 cup arrowroot
- 1 teaspoon xanthan gum
- 3/4 cup butter, softened
- 3/4 cup sugar
- 3/4 cup light brown sugar, packed
- 2 eggs
- 1 teaspoon vanilla essence
- 1 1/4 cups gluten-free flour
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 3/4 cups rolled oats
- 1 cup raisins
Recipe
- 1 preheat oven to 375 f (190 c).
- 2 in large bowl, cream together butter and sugars until smooth.
- 3 beat in the eggs and vanilla until fluffy.
- 4 stir together four, baking soda, cinnamon and salt.
- 5 gradually beat into butter mixture.
- 6 stir in oats and raisins.
- 7 place teaspoonfuls on cookie sheet. they will spread a little.
- 8 bake 8-10 minutes or until golden brown.
- 9 place on rack to cool.
