Gluten Free Oatmeal Raisin Cookies

Ingredients

  • 2 cups rice flour
  • 1 cup potato starch
  • 1/2 cup arrowroot
  • 1 teaspoon xanthan gum
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup light brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 1/4 cups gluten-free flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 3/4 cups rolled oats
  • 1 cup raisins

Recipe

  • 1 preheat oven to 375 f (190 c).
  • 2 in large bowl, cream together butter and sugars until smooth.
  • 3 beat in the eggs and vanilla until fluffy.
  • 4 stir together four, baking soda, cinnamon and salt.
  • 5 gradually beat into butter mixture.
  • 6 stir in oats and raisins.
  • 7 place teaspoonfuls on cookie sheet. they will spread a little.
  • 8 bake 8-10 minutes or until golden brown.
  • 9 place on rack to cool.
