Gluten Free Pancake / Waffle Mix

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup brown rice flour
  • 3 tablespoons tapioca starch
  • 1/3 cup potato starch
  • 2 teaspoons sugar
  • 1 1/2 teaspoons baking powder (gluten-free)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon guar gum
  • 2 eggs (i use extra large)
  • 3 tablespoons canola oil
  • 1 cup almond milk (minus 1 tbsp)
  • 1 tablespoon lemon juice
  • 1 cup water

Recipe

  • 1 1. mix all dry ingredients together.
  • 2 2. add wet ingredients and stir well.
  • 3 3. mix will seem watery in consistency, but the recipe makes really fluffy waffles.
