Gluten Free Pancake / Waffle Mix

Ingredients
- 1 cup brown rice flour
- 3 tablespoons tapioca starch
- 1/3 cup potato starch
- 2 teaspoons sugar
- 1 1/2 teaspoons baking powder (gluten-free)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon guar gum
- 2 eggs (i use extra large)
- 3 tablespoons canola oil
- 1 cup almond milk (minus 1 tbsp)
- 1 tablespoon lemon juice
- 1 cup water
Recipe
- 1 1. mix all dry ingredients together.
- 2 2. add wet ingredients and stir well.
- 3 3. mix will seem watery in consistency, but the recipe makes really fluffy waffles.
