Gnocchi And Sausage Supper

Ingredients
- Servings: 4
- 1 lb italian sausage (casings removed)
- 1 (16 ounce) package gnocchi
- 1/2 cup yellow sweet onion, chopped
- 1 (10 ounce) bag fresh baby spinach leaves
- 1 tablespoon garlic, minced
- 2 tablespoons olive oil
- 1/2 cup grated parmesan cheese
Recipe
- 1 cook gnocchi as described on package; save 1/2 cup of pasta water for later.
- 2 add olive oil to hot pan; add onions and cook until softened.
- 3 add sausage with casings removed. break up with a fork and cook until no longer pink.
- 4 add spinach and garlic. cook until spinach is wilted.
- 5 add cooked gnocchi, 1/2 cup pasta water and cheese.
- 6 heat until cheese melts. enjoy!
