High Fiber Bran Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 1 cup wheat bran
  • 1 1/2 cups whole wheat flour
  • 1/2 cup raisins
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup milk
  • 1/2 cup molasses or 1/2 cup honey
  • 2 tablespoons oil
  • 1 egg, beaten

Recipe

  • 1 preheat oven to 400°f.
  • 2 stir together: bran, flour, soda and baking powder.
  • 3 then stir in raisins and set aside.
  • 4 blend milk, molasses, oil and egg.
  • 5 add to dry ingredients and stir just until moistened.
  • 6 spoon into greased muffin tins and bake for 15 minutes or until muffins pull away from sides of cups.
