Italian Mushroom Rice

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 gallon water
  • 1 teaspoon salt
  • 2 cups rice
  • 1 3/4 lbs fresh mushrooms, sliced
  • 1/4 cup butter
  • 1/2 cup red wine
  • salt
  • pepper
  • 3/4 cup chopped fresh parsley

Recipe

  • 1 in a large container, bring water to a boil.
  • 2 add salt and rice and stir.
  • 3 boil uncovered for 15 minutes.
  • 4 pour rice into colander and drain.
  • 5 in a seperate saucepan, saute mushrooms in butter and wine.
  • 6 season with salt and pepper.
  • 7 add parsley and let wilt lightly.
  • 8 toss drained rice with mushroom-wine mixture.
  • 9 put in greased 1-quart pyrex dish.
  • 10 cover with foil.
  • 11 heat thoroughly in a 350f oven about 30-35 minutes.
