Italian Mushroom Rice

Ingredients

- 1 gallon water
- 1 teaspoon salt
- 2 cups rice
- 1 3/4 lbs fresh mushrooms, sliced
- 1/4 cup butter
- 1/2 cup red wine
- salt
- pepper
- 3/4 cup chopped fresh parsley
Recipe
- 1 in a large container, bring water to a boil.
- 2 add salt and rice and stir.
- 3 boil uncovered for 15 minutes.
- 4 pour rice into colander and drain.
- 5 in a seperate saucepan, saute mushrooms in butter and wine.
- 6 season with salt and pepper.
- 7 add parsley and let wilt lightly.
- 8 toss drained rice with mushroom-wine mixture.
- 9 put in greased 1-quart pyrex dish.
- 10 cover with foil.
- 11 heat thoroughly in a 350f oven about 30-35 minutes.
