Jiffy Corn Muffins Mix Clone

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 2/3 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1/3 cup milk

Recipe

  • 1 preheat oven to 400°f combine flour, corn meal, sugar, baking powder and salt. mix well with whisk.
  • 2 whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.
  • 3 combine above mixture with egg and milk and mix well. batter will be slightly lumpy. for best rise, let batter rest for 3 or 4 minutes. stir once or twice after rest.
  • 4 fill muffin tins 1/2 full. bake 15-20 minutes. makes 6 muffins.
