Kewpie Mayonnaise

Ingredients

  • 1 egg, at room temperature
  • 1 1/4 cups canola oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 -3 tablespoons seasoned rice vinegar

Recipe

  • 1 crack egg into the bowl of a food processor.
  • 2 add salt and sugar, and process until well combined.
  • 3 with the motor running, add the oil in a slow, steady stream until all is incorporated.
  • 4 with the machine running, add the rice vinegar.
  • 5 cover, and refrigerate for at least an hour, before ready to use.
