Gluten Free Cowboy Cornbread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 9
  • 1 1/2 cups cornmeal
  • 1/2 cup rice flour (i use authentic foods brand)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup frozen corn, thawed
  • 1 small onion, chopped small

Recipe

  • 1 combine first 4 ingredients, mix well. add milk, eggs, oil, stirring well. stir in remaining ingredients. pour into greased 9 inch square baking pan. bake at 350 degrees for 40 to 45 minutes until lightly brown. yield 9 servings.
