Gluten Free Cowboy Cornbread

Ingredients

- 1 1/2 cups cornmeal
- 1/2 cup rice flour (i use authentic foods brand)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs, beaten
- 2 tablespoons vegetable oil
- 2 cups sharp cheddar cheese, shredded
- 1 cup frozen corn, thawed
- 1 small onion, chopped small
Recipe
- 1 combine first 4 ingredients, mix well. add milk, eggs, oil, stirring well. stir in remaining ingredients. pour into greased 9 inch square baking pan. bake at 350 degrees for 40 to 45 minutes until lightly brown. yield 9 servings.
