Gnocchi With Spinach And Beans

Ingredients

- 1 teaspoon extra virgin olive oil
- 2 cups gnocchi
- 1 medium onion, thinly sliced
- 2 tablespoons garlic
- 1/2 cup water
- 6 cups spinach, chopped
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can beans
- 1/2 teaspoon pepper
- 1/2 cup part-skim mozzarella cheese, shredded
- 1/4 cup parmesan cheese
Recipe
- 1 cook gnocchi according to package.
- 2 heat olive oil and onion in a pan over medium heat for 2 minutes.
- 3 stir in garlic and water.
- 4 cover and cook until the onion is soft.
- 5 add spinach and cook until starting to wilt.
- 6 stir in tomatoes, beans and pepper and bring to a simmer.
- 7 stir in the gnocchi and sprinkle with mozzarella and parmesan.
- 8 cover and cook until the cheese is melted.
