Gnocchi With Spinach And Beans

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 teaspoon extra virgin olive oil
  • 2 cups gnocchi
  • 1 medium onion, thinly sliced
  • 2 tablespoons garlic
  • 1/2 cup water
  • 6 cups spinach, chopped
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can beans
  • 1/2 teaspoon pepper
  • 1/2 cup part-skim mozzarella cheese, shredded
  • 1/4 cup parmesan cheese

Recipe

  • 1 cook gnocchi according to package.
  • 2 heat olive oil and onion in a pan over medium heat for 2 minutes.
  • 3 stir in garlic and water.
  • 4 cover and cook until the onion is soft.
  • 5 add spinach and cook until starting to wilt.
  • 6 stir in tomatoes, beans and pepper and bring to a simmer.
  • 7 stir in the gnocchi and sprinkle with mozzarella and parmesan.
  • 8 cover and cook until the cheese is melted.
