Green Pepper Brown Rice

Ingredients
- Servings: 4
- 1 -2 tablespoon butter
- 1 cup chopped green bell pepper
- 2 scallions, chopped ( and light green parts)
- 1 garlic clove, minced
- 1 3/4 cups chicken broth (or vegetable broth)
- 1/4 teaspoon pepper
- 2 cups instant brown rice
- salt, as needed to taste
Recipe
- 1 in a saucepan over medium heat, melt butter; add green pepper and scallion and saute for about 5 minutes.
- 2 add broth and black pepper to saucepan; bring to a boil.
- 3 stir in the rice; reduce heat and cover and simmer for 5 minutes.
- 4 uncover, fluff w/ fork. add salt, if needed.
- 5 serve.
