Herbed Rice Pilaf

Ingredients

- 1 1/2 tablespoons butter
- 1/2 cup chopped scallion
- 1/4 cup chopped parsley (dill, and or or basil)
- 2 cups quick-cooking rice
- 2 cups vegetable broth or 2 cups chicken broth
- 1/4 teaspoon pepper
Recipe
- 1 in a medium saucepan, melt butter. add scallions and herbs and cook, stirring, for 1 minutes.
- 2 add rice, stir to coat grains and then add broth.
- 3 bring to a boil over high heat, cover, remove from heat and let stand until liquid is absorbed and rice is tender, 5 minutes.
- 4 season with salt and pepper to taste. fluff with a fork before serving.
