Herbed Rice Pilaf

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons butter
  • 1/2 cup chopped scallion
  • 1/4 cup chopped parsley (dill, and or or basil)
  • 2 cups quick-cooking rice
  • 2 cups vegetable broth or 2 cups chicken broth
  • 1/4 teaspoon pepper

Recipe

  • 1 in a medium saucepan, melt butter. add scallions and herbs and cook, stirring, for 1 minutes.
  • 2 add rice, stir to coat grains and then add broth.
  • 3 bring to a boil over high heat, cover, remove from heat and let stand until liquid is absorbed and rice is tender, 5 minutes.
  • 4 season with salt and pepper to taste. fluff with a fork before serving.
