Hoppin' John

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 cup ham, diced
  • 1 cup onion, chopped
  • 1 cup black-eyed peas, picked over and rinsed
  • 1 cup rice, cooked
  • 1/2 teaspoon chili powder
  • salt and pepper

Recipe

  • 1 prepare black eyed peas overnight or quick method. (i boiled for 5 min, brought to boil and simmered for one hour.).
  • 2 dice ham and remove as much fat as possible.
  • 3 chop onion.
  • 4 combine onion and ham in dutch oven, stir over medium heat until onions start to wilt.
  • 5 add chili powder.
  • 6 add cooked beans with any remaining cooking liquid.
  • 7 add water so that there is about a total of one cup liquid.
  • 8 add rice.
  • 9 cover, simmer for 10 minutes.
  • 10 add salt and pepper if needed.
